Nuoc Cham: The Catsup of Vietnam

Adapted from Pleasures of The Vietnamese Table

3  Thai bird chilies

1  clove garlic

3  tablespoon sugar

2/3 cup warm water

1 1/2 tablespoon lime juice

5 tablespoon fish sauce

Chop chilies and garlic with a knife or run through a mortar or food processor.

Add remaining ingredients.

I added fresh ginger for The Cookout.

This is on most Viet tables and every region and family has specific nuances.
