Spring Supper: Crustaceans and Linguine

Shallots, garlic, Thai chiles, fresh oregano, tomatoes, and lemon juice come together nicely to make a light pasta when warm weather sets in. These simple ingredients give pantry staples dried pasta and frozen farm raised shrimp the flavor components needed to be more than food in a bag.

Recipe:

3 garlic cloves

3 shallots

3 thai chiles

2 tomatoes

fresh oregano

1 lemon, juiced

dried linguine

shrimp

parmesan

Saute garlic, chiles, and shallots in olive oil.  Add shrimp, and cook until just done, add tomatoes, pasta, lemon juice, and fresh oregano using reserved pasta water for moisture if needed.  Season to taste and top with parmesan.
